Pork Chops with Apples and Pecan Salsa

Sometimes for dinner I just want to eat some porkschawps and applsawce.  Mostly so I can just talk like Peter Brady impersonate Humphrey Boggart.  And relieve the days when Peter Brady was my major crush and destined to be my future husband (even though he was my age in the 1970s…a tragic love that could never be).

This is a dish that Peter Brady would love- an update on pork chops and applesauce.   The pork chops are pounded thin, fried, and topped with a sweet and juicy apple pecan salsa.  Yum!

Slightly Adapted from Heat Oven to 350

2 tablespoons butter, divided
1 apple, coarsely chopped
1 tablespoon honey
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1/4 cup chopped pecans, toasted
4 pork chops, pounded thin
Salt and pepper

In a large skillet over medium heat, melt 1 tablespoon of butter.  Add apple, honey, vinegar, and lemon juice.  Cook for 5-7 minutes, until apples begin to soften.  Add pecans and toss.  Pour apple mixture into bowl and set aside.
Melt remaining tablespoon of butter.  Season pork chops with salt and pepper.  Cook pork chops for 2-4 minutes (depending on the thickness of your pork chops) then flip.  Pour apple mixture over top.  Cook for 2-4 minutes, until pork chops are cooked through.
Serves 4.
