You can never have too many chicken recipes in your arsenal. Chicken often gets a bad rep as being plain and boring, and often it can be. I am guilty of turning up my nose at chicken because it seems too boring. So one night it was me versus chicken breast. And this time I came out on top with this delicious chicken recipe.
16 ounces chicken breast
1/4 cup balsamic vinegar
4 cups soy sauce
1/4 cup chicken stock
2 tablespoons granulated sugar
2 tablespoons brown sugar
2 tablespoons honey
2 teaspoons ketchup
1/2 pineapple, chopped
Cut chicken breasts into 5-6 pieces. Pound thin.
In a bowl, combine balsamic vinegar, soy sauce, chicken stock, sugars, brown sugar, honey, and ketchup. Pour into a plastic bag and add chicken breast. Shake to coat. Marinate at least 4 hours, up to 24 hours.
Preheat broiler.
Heat a large skillet over medium-high heat. Remove chicken from marinade and add to pan. Cook until chicken is cooked through, about 4-5 minutes per side (time will vary depending on how thick your chicken is). Remove chicken from pan and set on baking sheet. Broil for 2-3 minutes, until edges begin to crisp and brown.
Increase heat to high and add the remaining marinade to skillet. Cook until thickened, about 7-10 minutes. Add pineapple and cook an additional 2-3 minutes. Pour sauce over chicken.
Serves 4-5.
