Candied Cinnamon Sugar Walnuts

Are you ready for a New Year? Or, like me, are you ready for another holiday where you can eat a lot of good food?

Food may not always be the focus of New Year’s Eve while many are preoccupied with imbibing, but you have to remember to eat something on New Year’s Eve, right?  For a perpetual sweet tooth like me, these nuts are a perfect snack.  Nuts are a great source of protein and vitamins, but the crunchy cinnamon sugar coating makes them oh so much more delicious. They are a great party snack food to serve up on New Year’s.

CANDIED CINNAMON SUGAR WALNUTS
Adapted from Food Babbles
INGREDIENTS

Vegetable oil
2 cups walnuts
1/2 cup powdered sugar
1/4 cup granulated sugar
3 tablespoons ground cinnamon
Salt, to taste

DIRECTIONS

In a large skillet, heat 1 inch of oil to 350°F.

Bring a large pot of water to a boil.  Add walnuts.  Blanch for 45 seconds.  Drain walnuts and transfer to a large bowl.  Pour powdered sugar over warm walnuts and toss until the nuts are coated.  Make sure the powdered sugar is melted on the nuts.

With a slotted spoon, transfer the nuts in batches to the hot oil.  Before adding another batch, make sure the foam has subsided.  Fry for about 1 minute, until nuts are golden brown.  With a slotted spoon, remove nuts from oil and place on a baking sheet.  Sprinkle sugar and cinnamon over top warm nuts.  Season with salt to taste.  Store in an airtight container.
