Chicken Parmesan is a classic Italian dish that I never really thought about making at home before I started cooking. Italian always seems like it should be a lot of work, but it’s really a simple cuisine to make at home. It lets ingredients shine in their glory and utilizes delicious combinations. Chicken Parmesan is the classic combination of cheese, pasta, and tomato sauce. This can be as homemade or as storemade as you have time for.
Another bonus of making something at home is that you can adjust the recipe at home so that you aren’t eating anything drenched in oil or butter. And the taste doesn’t suffer, it’s still tastes delicious and Italian!
INGREDIENTS
8 ounces fettucine
16 ounces chicken breast, cut into 4 pieces
2 tablespoons butter, melted
1 cup Italian breadcrumbs
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1/2 cup Parmesan cheese
2 ounces mozzarella cheese
1 cup marinara sauce
In a large pot, boil salted water. Cook fettucine pasta until tender. Drain and set aside.
Preheat oven to 450°F. Spray a baking sheet with cooking spray.
Pound the chicken breast thin. Combine bread crumbs, Parmesan cheese, garlic powder, and oregano in a bowl. Brush melted butter on chicken breasts, then dip in the bread crumb mixture. Lay on baking sheet. Spray tops of chicken with cooking spray. Bake 20 minutes.
Remove chicken from oven. Divide mozzarella cheese on top each chicken breast. Bake 5 minutes. Put fettucine in individual bowls. Top with marinara sauce and chicken. Grate additional Parmesan cheese and Italian spices on top if desired.
Serves 4.
