Cooking has definitely sophisticated my palate and brought appreciation for new foods. However, my old, trashy palate has not gone anywhere. I still love my favorite foods of the past. Spaghetti-O’s and buttered, fried bread for dinner and melted chocolate chips for dessert still sounds delicious.
Another favorite of mine, perhaps the first recipe I ever created myself, is this “mousse”. It only has three ingredients: instant pudding, milk, and whipped cream. It can be used with any type of pudding: I like chocolate, vanilla, banana cream, and butterscotch.
I stand by the fact that this is indeed a real recipe because about a year ago, I noticed Jello includes a recipe on their box- which they obviously stole from me (they have the proportions wrongs anyway).
And ignore my shadow filled picture: this mousse is the perfect late night snack. Let me tell you, there is nothing more satisfying than coming home from working in my research lab all night to some faux-mousse made in less than 10 minutes.
1 package instant pudding mix
2 cups milk
1 cup whipped cream topping, thawed
In a medium bowl, combine pudding mix and milk. Whisk for 2 minutes. Cover and refrigerate for at least 5 minutes. Fold in whipped cream until just combined
