So I still have lots of wonton wrappers to use up. Lucky for me that wontons can be used with lots of flavors. I had made quesadillas with brie and pears before and wanted to try them again but with a new fruit. But buyng a package of 12 tacos for just me didn’t seem to be worth it. Enter: wonton wrappers.
These turned out to be a summery, light dinner. Plumcots and apricots are now in season, so I plan to eat this combination of plumcot, brie, honey, and onions. Measurements are mostly to taste- just assemble and enjoy!
Wonton wrappers
Apricots, sliced (or any other stone fruit)
Brown sugar
Red onion, sliced
Brie, softened
Honey
Herbes de Provence
Preheat oven to 350°F.
In a small skillet, cook red onions over medium heat until softened, about 5 minutes.
Combine apricot slices with a little brown sugar, if desired (You can omit the sugar if you want).
Spray a muffin tin with cooking spray. Press a wonton wrapper carefully in the bottom of the cup. Place a small amount of brie at the bottom. Top with apricot slices and red onion. Press another wonton on top. Top with brie, apricot sluces, and red onion. Top with herbes de provence.
Bake for 10-15 minutes until the edges are browned. Let cool in pan for 2-3 minutes. Remove and top with honey.
