I love pizza.
Before, I used to only like plain cheese pizza with only a little tomato sauce ordered from our local chain pizzeria that begins with a D. Homemade pizza was not even on my radar. I have learned the error of my ways- homemade pizza is the superior option. Now, I like to make my own pizza crust and try new toppings. Another plus of making your own pizza is that you can make an entire pizza just for yourself (if you are not into the sharing thing).
For this is a pizza, I threw together ingredients and hoped for the best. I had never tried making a cream base or have seafood on pizza. Luckily, it turned out very well- creamy, cheesy, a little spicy, and topped with delicious shrimp. I used all whole wheat flour which makes the crust a little firmer and crunchier than all purpose flour- both would work. You could also use any type of cheese you wanted, but fresh mozzarella is so much better and meltier than preshredded.
This recipe makes enough for one person (provided they love pizza as much as I do). Double the recipe to serve one large pizza that serves 2-3 people.
1/2 package active yeast
1/8 teaspoon granulated sugar
1/4 cup water, at 110°F
3/4 cup all purpose flour
1/4 teaspoon salt
1/2 tablespoon butter
2 1/4 teaspoon all purpose flour
1/8 teaspoon cayenne pepper
1/4 teaspoon ground mustard
1/8 teaspoon garlic salt
1/4-1/2 teaspoon cornstarch mixed in 1/2 teaspoon water
1/2 cup milk
2 teaspoons olive oil, divided
8-10 shrimp, peeled and deveined
Salt and pepper, to taste
1 ounce fresh mozzarella, sliced
1/2 ounce Asiago cheese, grated
1/4 red onion, thinly sliced
1 green onion, chopped
For the Pizza Dough:
Dissolve yeast and granulated sugar in warm water. Let sit about 10 minutes until foamy. In a medium bowl combine flour and salt. Add yeast mixture to flour mixture. Stir with a wooden spoon until soft dough forms. Knead dough on floured surface for about 10-20 minutes, until soft and elastic.
For the Pizza:
Preheat oven to 450°F.
Prepare a baking sheet or pizza stone. Roll pizza dough at to desired thinness. Set aside.
In small bowl, combine flour, ground mustard, cayenne pepper, and salt until smooth. In small saucepan over low heat, melt butter. Whisk in flour mixture and let cook for 1-3 minutes. Gradually add milk, stirring constantly with a whisk. Continue to cook for 2 minutes until thickened. Whisk in cornstarch mixture if needed as a thickener. Remove from heat and set aside.
In small skillet, cook red onions in about 1 teaspoon olive oil until soft and tender, about 5-7 minutes. Remove onion and set aside. Add 1 teaspoon olive oil and shrimp with salt and pepper to taste. Cook approximately 5-6 minutes, until tender and pink. Remove from heat.
Spread white sauce on pizza crust. Top with mozzarella, Asiago cheese, and red onion. Bake for 8-10 minutes until cheese is melted. Remove from oven, top with shrimp. Bake an additional 2-3 minutes. Top with green onions.
